KOSTAKI ANCESTRAL METHOD is our vibrant, sparkling dry white wine boasting a modest 10.5% ABV, delivering a bone-dry and refreshing effervescence.

In the glass, it presents a delicate mousse, while subtle notes of citrus, apple, and yeast intertwine elegantly. This wine exudes a crisp, straight-forward character, making it an excellent aperitif or a perfect pairing for seafood, sushi, or tapas.

The grapes were hand-harvested from bush vines end of July 2024, direct pressed and spontaneously fermented in stainless steel. After 21 days, the fermenting juice was racked and immediately bottled.
The wine fermented in bottle to full dryness. It stayed on its lees until it was disgorged in February and March 2025 with the addition of 10mL orange wine as dosage.
