KOSTAKI ANCESTRAL METHOD is our vibrant, sparkling dry white wine boasting a modest 10.5% ABV, delivering a bone-dry and refreshing effervescence.

In the glass, it presents a delicate mousse, while subtle notes of citrus, apple, and yeast intertwine elegantly. This wine exudes a crisp, straight-forward character, making it an excellent aperitif or a perfect pairing for seafood, sushi, or tapas.

The grapes were hand harvested from young bush vines in the second Week of August 2023, directly pressed and spontaneously fermented in stainless steel. After 12 days, the fermenting juice was racked and immediately bottled with about 15 g/L of RS. The wine stayed on its lees until it was disgorged in February 2024. No dosage was added.
