Early Harvest 2024

KOSTAKI Early Harvest is our energetic off-dry white wine, coming in hot at a modest 9% ABV. Crafted to embody the essence of island living, this lively and versatile white wine pairs effortlessly with a variety of dishes or serves as a refreshing sipper at the bar.

In the glass, it shimmers with a light lemon hue. Inviting aromas of green apple, lime, and citrus dance on the nose, while the crisp acidity beautifully balances the wine's sweetness. It's more than just a wine – it's a delightful cocktail in a glass!

The grapes were hand harvested from bush vines in the last week of July 2024. Upon arrival at the winery, the grapes are slightly squeezed and macerated under inert conditions for 2h before being pressed After cold sedimentation (24H), the must was let to ferment with indigenous yeasts at 17C in stainless steel tanks. Once the fermenting must reached 9% ABV, the fermentation was arrested by cooling. The wine was then racked and aged on its fine lees for 8 months (with biweekly batonnage), before being bottled. Small amounts of orange wine (5%) were added to the final blend for additional structure.
